Yummy Gooey Blueberry Muffins!

Imagine this..... biting into a warm muffin with a crunchy top, while the blueberries burst into your mouth with wholesome gooey blueberry juice squirting into your palate! Isn't this awesome for a breakfast?

Yup, we made this for weekend breakfast. The ever famous Blythe's Blueberry muffins. This recipe was shared by Gwyneth Paltrow's Favourite Recipe. Her mum, Blythe Danner made these blueberries muffin for her when she was pregnant. Gwyneth was right. These muffins just have the right balance of tart and sweetness.

The boys are very fond of blueberries. They loved popping the tiny little balls into their mouth. Kye has even more creative ideas which he loves to squash the blueberries which is tiny little fingers. He is probably practicing his fine motor skills! Anyway, blueberries are high in antioxidants, vitamin C, manganese and anthocyanins. So, blueberries are good! 

We are glad and proud to share this very simple recipe. Try not to omit the sugar topping because it gives a crunchy top when it is freshly baked. There is no need to reduce the sugar because the outcome has just the right sweetness.

Blythe's Blueberry Muffin

Makes 12


1/2 cup unsalted butter, melted and cooled slightly
2 eggs 
1/2 cup whole milk
2 cups all-purpose flour
3/4 cup plus 1 tsp sugar, divided
2 teaspoons baking powder
1/2 teaspoon salt
2 1/2 cups fresh blueberries


1.) Heat over to 190degC. Line a 12 cup muffin pan with paper liners.
2.) Whisk butter, eggs and milk in a bowl.
3.) Combine flour, 3/4 cup sugar, baking powder and salt in another bowl.
4.) Stir wet ingredients into dry ingredients; fold in blueberries.
5.) Divide batter evenly among muffin cups; sprinkle with remaining 1 teaspoon of sugar.
6.) Bake until muffins are golden brown and a knife comes out clean, 25 to 30 minutes. Serve warm.
